Oatmeal – Pumpkin Pie Style

2/3 cup gluten free oats (Bob’s Red Mill)

2 cups almond milk

1/2 teaspoon vanilla extract

1/2 cup pumpkin puree

1/2 tablespoon chia seeds

1/2 teaspoon cinamon

1/4 teaspoon ginger

1/8 teaspoon nutmeg

Heat the oats and almond milk in a medium sized pot to boil.

Turn down to simmer and add the pumpkin and chia.

Simmer for 5-7 minutes

Add remaining spices, stirring regularly.

Simmer for additional 5 – 7 minutes

Serve hot
